The trade-off is bench space: in a smaller kitchenette or break room, a benchtop unit is a permanent fixture taking up counter real estate you might want for other things.
Under-Bench and Plumbed Systems: Clean Counters, Fixed Point of Use

An under-bench configuration, such as our under-sink chiller with filtered tap, keeps the working unit out of sight, with only a dedicated tap visible above the counter. This suits offices that want a clean, uncluttered kitchen area and are happy with a fixed dispense point at the sink rather than a separate station. It requires under-cabinet space for the unit and, for a plumbed system, a connection to the cold water line.

Bench space is the first constraint: if your kitchenette is small, an under-bench system frees up the counter entirely. Foot traffic is the second: a benchtop cooler in an open area serves people walking past more naturally than a fixed sink-mounted tap. Plumbing access is the third: a plumbed cooler or under-bench system needs a nearby cold water line, while a refillable benchtop unit needs none.
